Last night i tried out the Veggetti again, this time for salad. Cucumbers are great through it! I diced some tomato, sliced some red onion thin and then cut up some red pepper, plated and added this dressing - turned out great!

This is a very versatile sauce that I use for (almost) everything, just add a little more seasoning for the intended use! I put it in omelets on chicken, fish, Veggetti – even ground turkey stuffed peppers!

So today I was the happy recipient of a Veggetti vegetable pasta maker (Thx Nora!). If you haven’t seen one of these check it out here. Anyhow the other day I prepped some wonderful Roasted Red Pepper Tomato sauce (recipe here) and had not yet thought of a dish for it, what a great opportunity! So I stopped at the grocery store after my workout today and picked up a couple of yellow squash, time to get creative!

I had already thawed some (previously) fresh Tilapia I bought last week and decided to create a rustic dish with a bit of  Mexican flair, so here goes…

Ok, so something quick for lunch (1:30 meal). I usually have a cooked chicken breast (seasoned nicely) in the fridge for quick meals. Today I thought I’d mix up some fresh vegetables with some tasty seasoning in a skillet. Really simple, really quick and really tasty.
